Are These the Next Big Food Trend? This Rhode Island Baker Thinks So

Baker Katrin Schnippering shared her latest culinary creations.
Move over, trendy donuts, cupcakes, and hot chocolate bombs. 

“Meringue floaters are the next food trend,” says Rhode Island baker Katrin Schnippering, posting a video of whimsical animals floating atop a beverage. “Mark my words.”

Schnippering knows what’s popular — and knows her baked goods, as a grand-prize winner of the national King Arthur Cooking Decorating Contest.

Schnippering shared her creations online this week, and spoke with GoLocal about her inspiration.

Thinking Spring

“Aren’t they cute? There are so many options,” said Schnippering. “Now it’s how to narrow down what I want to do. What I posted, those are bunny heads. There will be bunny butts — they float and then they dissolve." 

Ever the perfectionist, Schnippering is currently working on her craft before putting them on her website for sale. 

“I want them to be a little prettier. It’s my OCD,” said Schnippering. “Once they are pretty enough they will totally be on my website.”

Schnippering said she isn’t planning on selling them for some of the big price points she is seeing for the hot product. 

“I saw them going for $3 [each] on Etsy,” she said. “I’m thinking maybe more like 15 for $10.”

And Schnippering is hoping people are ready for something a little “lighter” — coming out of the winter, and hopefully, the pandemic. 

“Chocolate bombs are such a cold weather thing,” she said. “These are a little springier.”
