One of the most exciting GoLocal up-and-comers to watch is only just starting to make her mark, as SlowFoodURI founder Neill is a URI senior in Kingston.

Named a Truman Scholar last spring—one of only 61 nationwide—Neill founded Slow Food URI "with a passion for food and great concern for the wellbeing of all things."

The mission? "It is our devout intent to create and celebrate a food system with roots in nutrition, environmental sustainability, and social justice."

"We are committed to educating others and bringing awareness to the college and surrounding communities about the need for a slower, more wholesome way of life. This involves making daily food choices that provide nourishment for our bodies as well as our planet, and rediscovering the simple pleasures of food that we have regrettably lost. As a student convivium it is important that we lead the way so that others may follow a path that is good, clean, and fair."

The double major in Nutrition & Dietetics and Sustainable Agriculture, who originally hails from Wakefield, sees big potential for the state.

Listed as a URI "Green Thinker," Neill said, "In Rhode Island we are blessed with great farms. It would be phenomenal to see the dining services take advantage of the resources that are at our fingertips! I mean, have you tried pasture-raised beef, cheeses made from Rhode Island milk, or purple-haze carrots from our very own Agronomy farm—they’re impressive!"
