PC Women's Basketball Assistant Coach Opens New Juice Cafe

Priscilla Edwards, Assistant Coach of the Providence College Women’s Basketball team has opened The Glow Cafe in Providence. Edwards's motivation for opening the new cafe and juice bar was she was looking to share her plant-based based lifestyle on a larger platform.

“Just from the name, ‘Glow’, we wanted to bring something bright to the community. There is an abundance of places that aren’t the healthiest. If I was going to bring something into the neighborhood, I wanted it to be something that would lift it up.”

As an athlete and a coach, Edwards is conscious about what she consumes and shares this lifestyle through The Glow Cafe.

“I wish I had discovered this earlier. There is so much that happens with our bodies that can be cured naturally. From swelling joints or inflammation, there are so many ingredients that we offer that are accessible to us to help. For instance, our ginger shot has turmeric in it, which is great for inflammation. There are foods that you can incorporate into your diet that can help you more than any medicine can," said Edwards. 

A delightful plant-based menu sports a variety of fresh-pressed juices, fruit smoothies, acai bowls, and even vegan Jamaican patties.

“They are Jamaican inspired, so there is a twist on it being vegan. We offer lentil, kale, mixed veggie, and tofu. It gives you a lot of variety, so if you are looking for something that is hearty but still a light lunch, they’re perfect. Most people are intimidated by them, but they end up falling in love with the flakey crust,” says Edwards. 

Acai bowls have been a popular hit at The Glow Cafe, Edwards says the customizable treat packs major health benefits.

“Acai is a berry, and has tons of antioxidants. It is a banana and acai blend, and then topped with granola, cacao nibs, coconut and finally some strawberries. If you wanted to go with something less sweet, we have tons of other toppings we can swap out.”
