Chili and cooked ground beef which were prepared in advance [yesterday], were not cooled to 70 degrees in 2 hours and then to 41 degrees F within 4 hours. Chili and ground beef were observed in covered metal pans, stacked on top of one another in the walk-in cooler between 45 and 47 degrees F. Chili and ground beef observed warmer in the center [45-47 degrees F], and cooler around the edges of the pan. Employee stated chili had reached 70 degrees F within two hours of cooling; chili was then covered and stored in the walk-in cooler to complete the cooling process. Voluntary disposal completed. Proper cooling methods were reviewed. Proper cooling log documentation was reviewed.

Food was delivered hot from the WMS. Temperature upon arrival was 110 degrees. Corrective action was to reheat product to 165 degrees. Verified by inspector.

Buffalo chicken and sliced tomatoes were held between 46-50 degrees F on the salad bar. Food was out for one hour and temperature logs indicate that food was 40 degrees F prior to putting it out for service. PIC stated that all meats are disposed of after lunch and the vegetables are cooled down to 41 degrees F. Salad bar is not designed to maintain food temperatures. Ice packs are placed underneath pans but food products are not maintaining 41 degrees F or below. Potentially hazardous food must be held at 41 degrees F. or below except during preparation, cooking or cooling.
