A Popular Neighborhood Bar in Providence Has a New Addition — Its Own Food Cart

A popular neighborhood bar in Providence has a new addition — its very own food cart.  

Gilligan’s on Chalkstone Avenue is set to launch “The Galley” and GoLocal has the scoop. 

“For the menu, it’s burgers, dogs, and fries, but with Guatemalan and Irish influences. Basically, Providence bar food at its finest,” owner Amanda Fullam told GoLocal. “Things like loaded NY System fries and shepherd's pie empanadas.”

It's the latest innovation for Fullam and her husband — as GoLocal wrote in November 2022, “One of Providence’s Ultimate Neighborhood Bars Has New Owners.” 

According to Fulam, the new addition was very much a team effort.

“The biggest thank you to Papa Wes who went above and beyond as always to get this project done. Thank you to Uncle Scott on the plumbery, Cousin Jeff on the electric, and Rudy on the grease cleanup crew. Shoutout Meg Boyd with the fire logo,” said Fullam. “It takes a village and we’ve got the best one!”

“We will be soft opening various days throughout May, posting a schedule soon. We plan to do a grand opening Saturday May 25, and from there we plan to be open at the bar Thursday through Sunday,  5 PM to midnight, “ said Fullam. “It will also be available for events and catering, so hopefully we get to bounce around a little for the summer, too.”
