Healthy Meals to Cook at Home: Chicken + Honey Mustard Pinwheels

GoLocalProv and Dave's Marketplace have teamed up to offer "Healthy Meals to Cook At Home." This series offers some of New England's best ideas for healthy cooking delicious meals, made from fresh, wholesome ingredients, in your own kitchen. This week's recipe, Chicken and Honey Mustard Pinwheels, comes from celebrity chef Giada DeLaurentis' new book Feel Good Food.  Giada will appear at Dave's Marketplace's East Greenwich location on Thursday, November 7th at 4:00 PM for a book signing. Quantities are limited, and you will need a receipt from Dave's to participate, so be there early!

Chicken and Honey Mustard Pinwheels

Ingredients:

½ cup (4 oz) mascarpone cheese, at room temperature
¼ cup whole-grain mustard
¼ cup honey
Grated Zest of 1 large lemon
1 teaspoon kosher salt
½ tsp black pepper
1 ½ cups arugula, chopped
2 cups shredded cooked chicken breast
2 (9x12inch) whole wheat lavash breads

Instructions:

1. In a medium bowl, mix together the mascarpone, mustard, honey, lemon zest, salt and pepper. Stir in arugula and chicken

2. Divide the chicken mixture between breads and spread it over the breads, leaving a ½ inch border. Starting at the longest edge, tightly roll up each bread like a jelly roll. Using a serrated knife, cut each roll into 8 pieces and serve.
