Healthy Meals to Cook at Home: Roasted Beets with Kale and Farro

This week's recipe; Roasted Beets with Kale and Farro, is simple to make, can be served as a side or main course, and is just as healthy as it is tasty.
 

 

 

Roasted Beets with Kale and Farro

Ingredients:
• ½ cup peeled red beets, ¼” to ½” cubes
• 1 package of Semi-Pearled Farro
• 1 1/3 cups Kale, chopped, blanched and shocked
• 2 tablespoons Carrots, shredded
• 1 1/3 tablespoons sliced almonds

• Dressing:
o ½ teaspoon Orange juice
o Zest from ¼ of an Orange
o Pulp from ¼ of an Orange
o ½ teaspoon Honey
o 1 1/3 teaspoons Olive Oil

Directions:
• Pre-heat oven to 425.
• Rinse Farro and add to boiling salted water. Simmer until just tender and chewy. Drain excess water and chill.
• Toss beets in ½ teaspoon olive oil and a pinch of salt. Place evenly on sheet pan and roast at 425 until just tender. Remove from oven and chill.
• Whisk together ingredients for dressing.
• Place all ingredients into one bowl. Add whisked dressing and toasted almonds. Toss to combine.
