A New Restaurant is Opening This Weekend — Featuring a Number of Rhode Island Food Stars

Co-owners Ed Brady and Jeff Quinlan have teamed up with Marco Scotti and Armando Bisceglia to launch Scotti’s Salumeria on Post Road in East Greenwich, which will officially welcome the public on Saturday.
GoLocal caught up with Brady on Friday to talk about the new eatery.

It’s got a very family feeling,” said Brady. “It’s comfortable and relaxing. It’s just about everyone having a good time, which is what we need right now.”
The “family” feeling is at the root of the restaurant, as Brady and Quinlan joined forces with Scotti — a veteran of another of their restaurants, the Thirsty Beaver — to launch the new business.

“Marco [Scotti] started with us eight years ago as a bar back at the Thirsty Beaver, and he worked his way up to bartender,” said Brady. “He went on make a great name for himself in the industry. He approached us with an idea, and we got behind the redirection.”
The redirection Brady is referring to was renovating the prior business — Huck’s Filling Station — to have a whole new look, including putting in a large window for additional seating and an indoor-outdoor feel.
“It feels like a brand new space,” said Brady.
Bisceglia, who owns Bacco Vino & Contorni on Federal Hill, will be working as head chef at the new restaurant in addition to managing his current role in Providence.
