Healthy Meals to Cook at Home: Shrimp Primavera

This week's recipe, Shrimp Primavera, allows for exploration and brings Italian gourmet right to your dinner table.

Ingredients

1 lb. shrimp, 41-50 cut tail off
1/2 lb. yellow squash, med diced
1/2 lb. zucchini, med diced
1/2 lb. red bell pepper, med diced
1 tsp. salt
1 tsp. black pepper
1 tbs. minced garlic
1 med red onion, diced
2 tbs. dried chives
1 tsp. Italian parsley
1 tsp. onion powder
1 tsp. roasted garlic powder
¼ cup blended oil
1 lemon zest
1 lime zest
¼ cup parmesan cheese
2 tbs. Balsamic white vinegar

Instructions

1. Defrost shrimp under cold running water. Remove tails.
2. Gather and wash vegetables. Prep vegetables according to the above ingredients.
3. Heat small amount of oil in a sauté pan. Then add garlic, summer squash, zucchini, and red onion. Saute until just tender. Let cool. Add uncooked onions to sautéed vegetables.
4. Add remaining ingredients.
5. Mix well. Chill and serve.
