Healthy Meals to Cook at Home: Kale + Farro Chicken Salad

GoLocalProv and Dave's Marketplace have teamed up to offer suggestions for "Healthy Meals to Cook At Home." This series offers some of New England's best ideas for cooking delicious and distinctive meals, made from fresh, wholesome ingredients, in your own home kitchen. This week's recipe, Kale and Farro Chicken Salad, is quick and simple to make, can brighten and spice up the winter table, and is as delicious as it is healthy.

Ingredients:
¼ cup of Kale
¼ cup of Farro
3 ounces of Grilled Chicken Breast, sliced thin
3 tablespoons Walnut halves, toasted
1 ½ tablespoons Matchstick Carrots
2 tablespoons Craisins
Dressing:
1 ¼ tablespoons Olive Oil
1 teaspoon Grey Poupon Dijon Mustard
1 teaspoon Honey
1 teaspoon White Balsamic Vinegar
Salt & Pepper—dash

Instructions:
* Blanch Kale and shock in ice bath. Squeeze out all excess liquid.
* Rinse Farro and add to boiling, salted water. Simmer until just tender and chewy. Drain excess water and cool.
* Prepare all other ingredients as directed.
* Whisk together dressing ingredients.
* Toss all ingredients together in a bowl.
* Chill.
