One of Newport’s most iconic — and upscale — dining locations has a new look, a new chef — and people are taking note not just in Newport, but beyond. 

Executive Chef and Director of Food and Beverage, Matt Voskuil at the newly opened Cara at the Chanler recently spoke with GoLocalProv’s Laura Afonso about the changes at Newport’s beloved hotel resort.

The historic hotel sits upon the Newport Cliff walk, providing guests with sweeping ocean views and true New England charm and elegance.

After building his culinary career in Las Vegas working for establishments such as The Bellagio and Wynn Resorts, Chef Voskuil traveled East and landed in Rhode Island’s ocean side town of Newport, “The size and the scale is very different from Las Vegas, as are the seasons. I was used to creating a Valentine’s Day menu for weather that was 85 degrees and sunny, so I had to write a totally different style of the menu being here” says Voskuil.

Over the summer, the hotel’s restaurant The Spiced Pear sunsetted, and transitioned to the new dining experience, Cara. Executive chef Voskuil is bringing tastes of  France into a minimalistic menu.

“The property is stunning and located right on the ocean. We have the cafe which is a bit casual, as well as Cara, which is more of a refined experience and definitely pulls on some French influence” says Voskuil.
